Title: Orange, Radish, and Onion Salsa

Yield: 4 Servings

1lgNavel orange; peeled, cored and chopped
1 1/2cRed radishes; chopped
1mdRed onion; peeled & roughly chopped
2 Jalapeno peppers; seeded, cored, & finely minced
3tbOlive oil
1tbRed wine vinegar
1tbMinced cilantro or parsley
  ;salt & fresh ground pepper

Place chopped orange in a medium mixing bowl or serving dish. Add radishes, onion, and jalapeno peppers. In a cup, combine oil, vinegar, cilantro, and salt and pepper.
